Guilt-Free Chocolate Mousse
I have a sweet spot for desserts especially chocolate. This chocolate mousse gives you all the bang without the buck. Consisting of egg whites, dark chocolate and raspberries, so it’s positively good for you! (in moderation). The egg whites are high protein without the high calories (that come from the yolk). Whilst quality dark chocolate (70-85% cocoa) is high in antioxidants, lower in sugar and rich in fibre and minerals. Add the raspberries and you’ve got extra sweetness, fibre and vitamin C.
Ingredients (serves 3) :
- 4 egg whites
- 100g 70% dark chocolate
- 1⁄2 teaspoon cocoa powder
- 40g raspberries
Method:
- Chop the chocolate up into small pieces and place it in a heatproof bowl. Bring a small pan of water up to boiling point then remove it from the heat and place the bowl of chocolate on top. The water in the saucepan should not be high enough to touch the bowl. Allow the chocolate to melt, stirring occasionally, then remove from the heat.
- Sieve in the cocoa powder, stir it through the melted chocolate and allow the mixture to cool a little.
- Separate the egg whites into a medium sized, grease-free bowl. Whisk the whites to soft/medium peaks.
- Using a large metal spoon or rubber spatula, stir a large spoonful of the egg whites into the mixture to loosen it, then carefully fold in the remainder of the egg whites.
- Divide between 3 individual ramekins or glasses and clean up any drips.
- Chill for at least 2 hours before serving, or overnight.
- When ready to serve, decorate with a dusting of cocoa powder and raspberries.
